First Agro’s Mitsuba has a very distinct appearance and characteristic fragrance with a nutty overtone. Also called as Japanese Parsley, Mitsuba’s subtle flavour is reminiscent to that of a blend of Celery leaves, Italian Parsley and Angelica. Seasoned Chefs say it offers a hint of Clove and has somewhat the sharpness of Sorrel. Add Mitsuba, fresh or cooked, to Japanese sukiyaki, vinegary dishes, fish soups, tempura batter, rice, salads, soups, casseroles, sashimi and custards. Experiment with all parts of the plant as the leaves, stems, seeds and even the roots are edible. Add leaves and stems to mixed green salads. Braise, sauté or steam; serve as a side vegetable. Add to stir-fries. Mitsuba turns bitter when cooked more than a few minutes. Cook this herb very lightly to preserve its flavour or add it to cooked dishes just before serving.
